Gorgeous Chicken and Coconut Milk Curry. Thai Style.

Not this Thai… he’s my band’s drummer, not our cook. I’ve seen him roll cigarettes, but I’ve never seen him make a curry soup.

I mean the other Thai, as in Thailand’s gorgeous cuisine. Mmmm.

Having gone to E-Mart today, having read a couple of comments from a Thai reader (welcome to the eclexys readership, Lynn), and having recently written about wonderful foods I miss, I decided to have some Thai curry soup tonight. Now, it may not be authentic. I don’t know Thai food that well. I thought I knew Korean food but I’ve been told I don’t know authetic, homecooked Korean food, which is much milder than the stuff I think of as a mainstay of the cuisine. It could be true of Thai food as well.

I just cracked open a can of Aroy-D Coconut milk, which you can now buy easily at Jeonju E-Mart, mixed half of the can with some water and a few spoonfuls of the 10-year supply of Thai curry paste that my parents sent me. (No kidding.) When the chicken, ginger, peppers, and onions were ready, I dumped this mix in and a little while later, I had a wonderful soup. (The only thing I really am missing is fresh basil, but that’s hard to buy in Korea.) It was very nearly adorned with vermicelli I bought in Seoul, but I decided to save that for when I can save this delicious food with someone else. I have a half a can of coconut milk in a container in the fridge, so maybe it will be soon? It won’t be the person I’d like to share this with… that person can’t come to Jeonju for now. But maybe one of my Jeonju friends would like to try it?

Speaking of my friend who can’t come here… she just called me, to tell me she had something to tell me, but couldn’t tell me just then. Hahaha. She is worried about her writing, but I tell you, she knows how to create suspense far better than me. I am really wondering what the story is. Hopefully she’ll tell me tomorrow.

I’ll bet it’s an interesting story.

It’s time for me to watch Dogville while ironing some clothes, and then get to bed.
